Green Fig Pie

A Caribbean favorite, this savory pie combines tender green bananas, creamy cheeses, and fragrant herbs, baked to golden perfection. Comforting, flavorful, and perfect as a side or main dish!

Ingredients
 
 

  • 8 green bananas
  • 1 medium onion, chopped
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 tablespoon thyme fresh or dried
  • 2 tablespoons chopped chives
  • 1 cup Cheddar cheese, grated
  • 1/2 cup Parmesan cheese, grated
  • 1 large egg
  • 3/4 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Place the green figs in a saucepan with water, bring to the boil and simmer for 20 minutes.
  • Drain, allow to cool enough to handle. Peel and finely chop.
  • In a skillet, melt a little butter over medium heat.
  • Add the chopped onion, minced garlic and sauté until fragrant and the onions are translucent, about 3–5 minutes.
  • Add the chopped green figs, thyme and garlic powder and cook for 5 minutes, stirring.
  • In a large mixing bowl, beat the egg and add the cream.
  • Stir in the Cheddar cheese, Parmesan cheese and chopped chives. Mix.
  • Add the green fig mixture and season with salt and pepper.
  • Preheat your oven to 375°F (190°C) and grease an 8 inch pie dish or baking dish with butter.
  • Spoon the banana mixture into the dish, smoothing the surface with a spatula.
  • Sprinkle the cheddar cheese over the top for a golden, cheesy crust.
  • Bake in the preheated oven for 25–30 minutes, or until the top is bubbly and golden brown.
  • Let it cool for a few minutes before serving.
