Dressing
2teaspoonsfresh Tamarind
2tablespoonscoconut oil
1jalapeno chilideseeded and finely chopped
1tablespoonlime juice
1tablespoonmint, freshchopped
½teaspoonsalt
½teaspoonblack pepper
Garnish
2cherry tomatoes
Coleslaw
1cupwhite cabbage thinly sliced
½cupred cabbage, thinly slices
3spring onionschopped
½mediumcarrotgrated
Instructions
Mash the tamarind with the coconut oil into a paste.
Add the lime juice and chilli. Blend to make a dressing.
In a medium mixing bowl place the cabbage, carrots and onion.
Pour the dressing over the cabbage mixture and coat well.
Add the fresh mint and garnish with the cherry tomatoes.
